Ever have one of those days where you’re scrambling for quick dinner ideas? I like having chicken thawed in the refrigerator for nights like that because there are so many easy chicken recipes on the web. And it’s really simple to sauté chicken in a light dressing or marinade.

I try really hard to have only one thing scheduled each day. With four kids, it’s tough, but I am a mom that needs her downtime, and running from activity to activity makes me slightly insane. In fact, if my schedule overwhelms me, I sometimes let everything go until I am back on even keel.

Last week, I overbooked our family… and I melted down.

As I looked over my Wednesday schedule before going to bed on Tuesday night, I started to panic. We were supposed to tour a fire station at 10:30, eat a packed lunch, spend the afternoon at co-op where I teach a class on the decomposers found in a rotting log {and bring the critters with me}, out to the farm where we get our meat and veggies for our last CSA pick up of the season, then back home for a quick dinner before heading to the circus.

I wanted to cry.

Instead, I looked at everything we had to do, decided to drop the fire station tour {my brother-in-law is a part time firefighter, so we could always do that another time}, and took a hard look at what I needed to do to get ready.

I breathed a huge sigh of relief when I thought about the new Land O’Lakes Sauté Express® Sauté Starter I had in the refrigerator. When we got home from the farm, I delegated. Brian peeled and sliced potatoes, Molly started some steamed broccoli in the microwave, and Trevor made some refrigerator biscuits while Logan played peek-a-boo with Isaac. I got the chicken going.

First, I pounded it out flat so it cooked as fast as possible. While I was pounding the chicken out, I started the Sauté Express® Sauté Starter and the potatoes. Super simple. I tossed two cubes of Sauté Express® Sauté Starter each into two separate skillets and let it melt.

Chicken sizzled in the seasoned butter while I tossed the potatoes and onions in the other skillet. Logan set the table, Trevor pulled biscuits out of the oven, and the microwave dinged. In less than 15 minutes we had an incredibly flavorful and healthy dinner on the table on an incredibly busy night.

And we got to the circus on time.

My recipe was simple. The chicken was just cooked in the sauté starter and allowed to absorb all of the delicious seasoning, cut and served. For the potatoes I cooked one medium diced onion in Savory Butter and Olive Oil Sauté Express® Sauté Starter until translucent. Then I added thinly sliced peeled potatoes and fried them until golden brown and done through. Right before serving them I sprinkled a bit of parmesan cheese on top and stirred it all up. Yum!
