Have you been inundated with party invitations yet this holiday season? We already have several on the schedule, and more coming. With all the prep I do before parties to cover all the bases with my intense kids, I look for easy holiday appetizers and dinner party recipes that take little or no prep.

I just never have enough time to do it all.

So, I love quick and easy – and frozen appetizers are a go-to solution for me. Rich’s SeaPak Spring Rolls are one of my favorite holiday appetizers to set out, so when Molly and I were at Walmart last, we picked up a few boxes to have on hand.

And then had to test out a box with different dips for ourselves.

Ladies Home Journal recently featured these yummy treats as “on of the 15 best frozen appetizers to serve at a party” and NBC’s Today Show displayed them in their round-up of holiday appetizers.

The kids and I agree that the combination of crispy wrappers, yummy vegetables, and delicious shrimp is a winner. {And then went to sign up for their newsletter so we could get recipes, tips, and coupons.}

I let Molly come up with different dip ideas, and while she’s usually a great cook, we decided that dips are not her forte… I’ll probably stick to tried and true recipes like this spicy peanut sauce from Rich’s SeaPak’s Pinterest boards.

She pulled put ranch dressing mixed with Tabasco sauce, honey mustard, soy sauce with some red pepper flakes, and the sweet chili sauce that came with the spring rolls. The sauce that came with the rolls was by far the best.

Honestly, though, there’s not much that could mess these appetizers up. Even with the, um, less-than-stellar dips, the rolls were fabulous. We’ll definitely be bringing them to our next gathering.
